Watermelon Juice

With the temperature hitting 92 degrees today and being in the high 80s this past weekend, it already feels like summer around here, so it’s time to break out the summertime drink recipes.  Although I drink ice water every single day and often drink iced green tea as well, sometimes I just want something a bit different that’s still just as clean and healthy and refreshing as water or green tea and this Watermelon Juice is exactly what I am looking for!

Recently I dug out an old cookbook of mine that’s filled with Mexican recipes looking for a specific taco recipe, but was sidetracked by the agua fresca section.  Apparently agua fresca is typically made with a combination of fruit (or seeds or flowers), water, and white sugar.  Since I didn’t use sugar in this, I feel it’s not a traditional agua fresca and have dubbed it Watermelon Juice instead.

If you try this and feel it’s not quite sweet enough, just try adding 1 tbsp. of raw honey, which should do the trick.

Watermelon Juice

Yield: 4

Ingredients

  • 7 c. ripe, seedless watermelon, removed from rind and cut into 2 inch cubes
  • 1 c. cold water
  • 1 tbsp. lime juice (preferably freshly squeezed)
  • Ice cubes

Instructions

  1. Combine approximately one-third of the watermelon cubes and one-third of the water in a blender. Blend until smooth. Using a fine-mesh sieve, strain into a pitcher. Discard the solids from the sieve.
  2. Repeat above step twice more with the rest of the watermelon and water.
  3. Add 1 tbsp. lime juice to the watermelon liquid in the pitcher.
  4. Serve on ice.
