Banana Pineapple Smoothie

While we were on vacation in Disney a couple months ago, one of my favorite things to do after a long, 10-hour day of nonstop walking was sit beside the pool and try a new, what I call, frou-frou drink. Of course, they were expensive ($10 a pop once we would tip the bartender!), but they were just so “cute” and looked so good after a hot day, I had to try a new one every time I went to the pool. There was one in particular that I totally fell in love with. The name on the menu was Tropical Breeze and it was one of the most delicious mixed drinks I’ve ever tried. So since having returned from vacation I’ve been thinking about trying to recreate that drink in smoothie form and today I finally gave it a go and succeeded (sans the coconut rum, of course!).
I added a 1/2 tbsp. of maple syrup to my Banana Pineapple Smoothie just to sweeten it up a bit because the pineapple wasn’t quite sweet enough for my taste buds today. You may not need the maple syrup, though, so try this first without any sweetener.

Ingredients
- 1 c. coconut milk (or milk of your choice)
- 1 medium banana, broken into chunks and frozen
- 1 c. fresh pineapple cut into chunks
- 2 tbsp. unsweetened shredded coconut
- 1 tbsp. coconut oil
- 1/2 tbsp. pure maple syrup (optional)
- 4 to 5 ice cubes
Instructions
- In a blender, place the ice and banana and pineapple chunks. Blend for approximately 15 seconds.
- Add the rest of the ingredients and blend until smooth or desired consistency.
