Strawberry Almond Smoothie

It’s almost time for strawberries here!  Just another month or so and we’ll have wild strawberries growing in our backyard…yum!  In the meantime, I’m working on smoothie recipes I can use our wild strawberries in so that I’ll be ready and this recipe is one I’ll definitely be using.

This Strawberry Almond Smoothie can be made two ways; either with 1/2 cup milk or with 1/2 cup plain yogurt, your choice.  I made it with milk this time, but I have made it before with yogurt before and both ways are equally delicious, in my opinion.

As always, try to use fresh fruit so it’s more flavorful, but if you only have frozen on hand, just thaw them first.  Also, I used sliced almonds for this because that’s what I have in the cupboard, but my suggestion would be to use the slivered almonds (no salt added) if you have them so there’s no skin.  I also used 1/2 tbsp. pure maple syrup in mine because the strawberries I used were store bought, so they weren’t as ripe (and sweet) as I would’ve liked.  If you use really ripe strawberries, you likely won’t need any sweetener.

Strawberry Almond Smoothie — Two Ways

Ingredients

  • 1 c. fresh strawberries, washed, capped and sliced
  • 1/2 c. milk of your choice or 1/2 c. plain yogurt
  • 1/2 c. almonds
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. pure almond extract
  • 1/2 tbsp. pure maple syrup (optional)
  • Dash of nutmeg
  • 4 to 5 ice cubes (optional)

Instructions

  1. Place all the ingredients (except ice) into blender and blend until smooth or desired consistency.
  2. If you want a thicker smoother, add the 4 to 5 ice cubes and blend again until smooth.
